Broiled Lemon and Garlic Tiger Prawns

Ingredients:
1 1/2 pounds tiger prawns, peeled and deveined
1 cup butter
1 teaspoon minced garlic
1 1/2 tablespoons lemon juice
3 tablespoons grated Parmesan cheese

Directions:
Preheat oven on broiler setting.

With a sharp knife, remove tails from prawns, and butterfly them from the underside.

Arrange prawns on broiler pan.
In a small saucepan, melt butter with garlic and lemon juice.

Pour 1/4 cup butter mixture in a small bowl, and brush onto prawns.

Sprinkle Parmesan cheese over shrimp.
Place broiler pan on top rack, and broil prawns for 4 to 5 minutes, or until done.

Serve with remaining butter mixture for dipping.

I love this idea of having this food during family movie night especially shrimp. Who would have thought of serving it while the family watches movie together. I will definitely try this one. This is a family favorite for home movie night; it's quick and easy and kids like the 'finger food' style.

Zesty Salsa

Do you love eating chips, like corn chips? If so, you should try this salsa I got from internet. It is very yummy.

10 cups chopped, seeded, peeled, cored tomatoes

5 cups chopped and seeded green bell peppers

5 cups chopped onions

2 1/2 cups chopped and seeded hot peppers

1 1/4 cups cider vinegar

3 cloves garlic, minced

2 tablespoons cilantro, minced

3 teaspoons salt1 teaspoon hot pepper sauce

Combine all ingredients in a large saucepot, adding hot pepper sauce, if desired. Bring mixture to a boil. Reduce heat and simmer 10 minutes. Ladle hot salsa into hot jars, leaving 1/4 inch headspace. Adjust two-piece caps. Process 15 minutes in a boiling water canner.

Barrack Obama was elected as new president of United States and made a history being the first Black American to occupy the position. People are now wondering what changes are in store for us. We know big Changes are Coming and we can only hope for best of this nation and its people. As we all know, ever since he got elected, he’s been all over the news and most of all on the youtube videos. I am sure most of us did see them. I have here a sneak peek of the movie that took 40 years in the making and I would like you to see it. Let me tell you what I thought after watching the video. Obviously, it is all about the changes Obama has been talking about. The writer and producer of the video is trying to the tell us what took place during roman times where Jesus didn’t succeed on changing people’s behavior. I don’t really think that America is going to fall like Rome. Then, there’s this thing about the economy slowly going down, job lay offs, bankruptcy and foreclosures and corporate people getting rich, while most of the middle and average class peoples struggling to make ends meets. Whatever the producer is trying to portray in this video, may or may not happen again, especially if we will all work together as one. And help the economy rise up again. Change is not going to happen overtime; we just need to give the new leadership time to work things out with our help. Cool 'n' Crunchy Chicken Salad

I am not a fan of sandwiches particulary tuna or chicken sals sandwich; but this recipes really made me love it. It is so yummy and healthy, too! I am sharing this with you guys, incase you want to try it.

Ingredients:

2 cups cooked chicken, diced or shredded
1 large hard boiled egg, chopped
2 tablespoons onion, diced
1/4 cup celery, diced
1/4 cup low-fat mayonnaise
1 teaspoon fresh lemon juice
1/3 teaspoon sugar
black pepper to taste

Preparation:

Dice or shred chicken.
Chop egg, onion and celery. Place in a large bowl.
Add mayonnaise, lemon juice, sugar and black pepper. Stir all ingredients together.
Cover and chill overnight or at least 2 hours before serving.
If desired, serve on bread, roll, croissant or pita bread with green leaf lettuce.

Variety is the spice in Malay Foods

Before I came here to U.S., I was living in Malaysia with my Aunt and her family. Her husband is a British National and is an Expat. These people likes foods and eating out; and while there I get to taste different culinary. I came to like Malay Foods for they are spicy and yet very delicious. These are the foods I miss most which I couln't find anywhere here.

The traditional culinary style has been greatly influenced by the long-ago traders from neighboring countries, such as Indonesia, India, the Middle East, and China.Malay food is often described as spicy and flavorful as it utilizes a melting pot of spices and herbs.

Nasi Lemak - a rice cooked with coconut milk and served with anchovies, nuts, cucumbers, a chili paste known as sambal and a choice of curries.

Kangkung belacan' is kangkung wok-fried in a pungent sauce of shrimp paste (belacan) and hot chilli peppers. Various other items are cooked this way, including petai (which is quite bitter when eaten raw; some older generation Malays still eat it as is) and yardlong beans.

Ketupat and rendang is the most delicious cuisine which is served normally on Hari Raya festival.

Rice is the staple diet in any Malay meal. It is often served for breakfast, lunch, dinner, and supper too. Most meals are eaten by using your fingers, and eating utensils are kept to a minimum. All dishes are served at the same time, accompanied by a refreshing drink. Fish is popular in Malay cooking, as with other seafood such as shrimps and cuttlefish. Beef and mutton are very popular choices but never pork as it is against their religious beliefs to eat pork. The other popular white meat is chicken.

MANILA, 12 November 2008 (IRIN) - Thanks to a local invention, lakeshore communities in the Philippines will soon begin using water hyacinths as an alternative source of fuel and organic fertiliser.
"The world is badly in need of raw materials for biomass fuel that we can grow easily even in places that we don't expect," inventor Gonzalo Catan Jr told IRIN.
The abundance of unwanted water lilies on the shores of Laguna de Bay - one of Southeast Asia's biggest fresh-water bodies - provided an opportunity for Catan to showcase his invention.
The prize-winning technology recycles bio-waste into environment-friendly "green charcoal", a compact solid fuel providing a good alternative to liquefied petroleum gas for cooking and possibly industry.
The technology works by using a "threader machine" to shred the water lilies. Next, enzyme-producing microbes are added and finally, the mixture of treated water lilies is put in the sun to dry.
Organic fertiliser vermicast may also be produced from the lake's organic mud deposits but instead of microbes, earthworms are added to the mix. "Water the mixture twice a week and let earthworms eat them [hyacinths]," Catan explained.
Catan said it was important to produce organic fertiliser. "That is the mistake of many countries, including the US. Production of bio-fuel goes now to feed cars instead of feeding cattle. Agriculture is also important," he said. Read more....

I think this is a good news for all the Filipinos; finally we can contribute with the fuel outage and saving the planet earth by using this organic fuel they have discovered they can use to help with. Parents and Teacher Conference

Lately I have been busy spending time with my family, which is why I haven’t visited my friends and their blogs. Hubby and I attended the Parents and teachers Conference in the afternoon after my son's school; then as a treat for Jacob for doing a good job at school, we went to Chucky Cheese's and we all enjoyed it especially my son.

PayPal "phishing" Attempt Article is Timely in Light of the Upcoming Holiday Season!

Has anyone of you received email from PayPal telling you that your account will be closed if you didn't update your Paypal account? I did three times and just ignored it even though I have a mixed feelings whether to update my account or not; but then again, I follow my instict and didn't update it at all. I just remember what hubby told me about pishing and scam. I am glad I didn't do anything with my Paypal account otherwise my aacount is gone now.

Here is an email we got from a friend of ours whom like I do, got sevral emails stating the same thing as mine. We need to really be careful about this scheme especially that the Holiday is fast aproaching. Read on.....

Thank you for instilling in us the sense to check things out that we aren't sure of. You may have saved me considerable grief. Last week I got an e-mail from "PayPal" stating my account had been closed due to illegal activity on my account , asking me to click a button to restore my standing with PayPal. Well, I thought about it awhile and decided instead to contact PayPal directly via phone. After push here, say this, say that and about 10 minutes of time on the phone, a real person came on the line. I told her about the e-mail. She told me it was an attempt at phishing that they refer to as spoof mail.

She stated I did the right thing in not clicking on anything and to have contacted the real PayPal. She had me forward the message to PayPal and shortly thereafter I got an email from them stating it was indeed "spoof mail" and thanking me for helping them to stop this from happening. PayPal will not contact people via e-mail if there is a problem with their account and as it stood, there was NO problem with my account.

Thanks to you and all your (and your department's) hard work I was able to recognize that something wasn't right and nip it in the bud before any damage had been done. I've been on site over 12 years at Washington Works and it's good to know I've learned something.
